In the middle of an Arizona summer, you say?
Yes. If your man is a mid-western boy. Beef and potato fed. He asked me the other day to make beef stew and requested that I make it often.
I was sweating even thinking about eating hot soup on a 115 degree summer day, but he was salivating thinking about it.
The things we do for loooove.
Here is my recipe that was literally demolished within 2 days. I made THREE POTS of stew in 1 1/2 week! This guy can eat!
Healthy Beef Stew
(Beef can certainly be replaced with other meat, or just throw in more veggies and go meatless!)
Servings: 1 hungry man or 10 regular people
A big hunk of stew meat - I don't know how much I bought... I think it was 3 lbs?
6 stalks celery
1 onion (he likes red, but any onion is good)
5 cloves minced garlic
4 potatoes (I once used sweet potatoes and those were delish!)
1/2 cup barley
1/2 head cabbage (optional, but I had to use mine up)
Any other fav. root veggies
6 cups water (or 3 cups low sodium chicken broth, 3 cups water)
salt, pepper, other seasonings as you please
Cut beef into bite sized chunks. Nothing too fancy.
Chop all your veggies before starting cooking the meat!
Use cooking spray to coat your pot
Toss in the beef chunks (that sounds gross, sorry)
Cook until browned, but not fully cooked through
Throw in all your veggies and stir best you can
(big pots are best, otherwise veggies go flying like mine did)
Add 6 cups water
generously season everything - I use salt, pepper, no-salt seasoning from Costco and Mrs. Dash. I use a lot of seasoning....
Cram the top on the pot and bring to a boil
Once boiling, reduce to a simmer and cook for approx 1 hour
Throw in the barley at this point. Stir the stew. Put the top back on and cook for another hour.
I'm sure you could do this in a crockpot too, but somehow between both me and Steve we've lost 3 crockpots. No idea where they are.
Stew the next day is fabulous too - the barley soaks up a lot of the moisture and it's a really hearty dish.
