Mama's Grape Salad in 6 Ingredients

Quick, light and easy. Three of my favorite words when it pertains to food.

I think every family has at least one or two favorite recipes. In our family, one happens to be my mother's Grape Salad. 

At any family function we attend, it's a staple on the menu, and consistently requested. The famous line from our cousins are "Where is Aunt Kathy's Grape Salad??!!"

 When my mother discloses the hidden location, a minor stampede occurs. Cousins, aunts, uncles and grandparents will fight their way to the bowl with spoons and forks in hand. Italians are passionate about their food, what can I say?

Here is our not-so-secret-anymore family recipe for creamy, cold, sweet and delicious Grape Salad. Bon Appetite! 

Grape Summer Salad

2 pounds red and green grapes (or whichever grapes you prefer)
8 oz. low fat sour cream
8 oz. low fat cream cheese
1 cup Splenda or sugar
1 tsp. vanilla extract
1/2 tsp. almond extract

If serving this dish to children, I would suggest halving the grapes to be safe, although it is pretty time consuming. Keep chilled. 

Allow cream cheese to warm to room temperature. Using an electric mixer, blend all ingredients except grapes, until free of lumps. Depending on which kind of sour cream and cream cheese you're using (i.e. fat free, low fat, or regular), the mixture will have varying consistency. Anywhere from frosting like to more liquid. As long as it tastes sweet and creamy, you're good to go!

Gently fold in grapes. If time allows, chill for at least an hour then serve.
