Mexico is for Lovers
Mexican food may not have the best reputation in most health food circles. Fatty cuts of beef are normally used to make Carne Asada, the beans and rice are prepared with lard and butter, and copious amounts of oil are used to fry up tortillas. The problem is, when you find an authentic Mexican joint, it just tastes so good. I headed to Mexico with five good friends for the weekend, and we were quickly reminded that taco stands across the border are out of this world delicious. Of course, you need to choose your corner stand wisely, and if possible, make sure you can see them cooking up your food. We stumbled across Los Cuates late Friday evening, and decided immediately that we needed to try their Carne Asada tacos. We chose this place not only because of the lack of stray dogs laying around, but because their long, white picnic tables were covered with Tupperewares of homemade salsa, guacamole, pico de gallo, sliced cucumbers and radishes, and salsa verde. The Tupperwares even had lids. SCORE.
I felt honored to be a part of this past weekend's trip, as two of my good friends got engaged! The entire thing was a total setup by him, and we were part of the elaborate plan to distract her from the real purpose of the trip. All the pieces fell perfectly into place, and it was fun to watch her leading up to the big moment. He asked, and she said YES! They are a couple that does it right.
