Cookies. That's all I want for breakfast. Warm, chewy, chunky cookies.
Ok, not really.... But it certainly seems like it would be a fun splurge.

How does one mix cookies and breakfast you ask? Would making cookies in a waffle maker make me feel better about my gluttonous decision?

Waffle Cookies
Makes 3 Dozen

1/2 C brown sugar
1/4 C sugar
1/2 C butter, melted
1 egg
1 tsp. vanilla
1 C + 2 tbs. all purpose flour
1/2 tsp. salt
1/4 tsp. baking soda
1/2 C flaked coconut (I used unsweetened)
1/2 C chopped cashews
1/2 C mini chocolate chips
In a large bowl, combine sugars, butter, egg and vanilla. Combine the flour, salt and baking soda and gradually add to the sugar mixture. Stir in the coconut, cashews and chocolate chips.

Drop batter by tablespoonfuls 1" apart onto preheated waffle iron coated with cooking spray. Bake for 1-2 minutes or until golden. Remove to wire racks to cool completely.
